This delicious mint popsicle recipe we share below is created from the amazing @liveeatlearn, a talented food blogger we absolutely recommend for many more delicious recipes!
INGREDIENTS:
- 1 14-oz can full-fat coconut milk
- ¼ cup sugar
- 1 cup packed fresh mint leaves
- 1 cup fresh spinach
- ½ cup dark chocolate chips, plus optional sprinkling at the end
INSTRUCTIONS:

Add coconut milk & sugar to a medium saucepan over medium/low heat. Heat until hot & steaming, stirring occasionally. Remove from heat & add mint leaves. Stir to combine & let mint leaves steep for 15 to 30 minutes. Fish out mint leaves & discard.

Add minty coconut milk & spinach to a blender. Puree until spinach is completely broken down.

Pour mixture into popsicle molds & freeeze for 6-8h.

Optional Chocolate Sprinkle: Melt dark chocolate, remove popsicles from the freezer, drizzle the chocolate over your popsicles & enjoy!
